There's Cody Trading Post at the insterate, but they admit they are just a tourist trap. There's some stuff to see in Cheyenne, too. And the Lincoln highway memorial at the top of the hill at Laramie. Panorama point (highest point in Nebraska) is not far from the point where Colorado, Wyoming, and Kansas come together. Always stopped at the Fort Fred Steele rest area in the truck, it's fully solar powered. Never could go visit the old fort site in the truck though.
